Three of the many coconut options at Trader Joe’s:
What’s your favorite coconut concoction?
My mom was full of wise sayings. Not that we recognized the wisdom growing up, but gradually her words have seeped into my daily life.
One echoes in my mind every day. “Breakfast is the most important meal of the day.” Mom was a breakfast proponent. I’m never hungry until I’ve been up a few hours. So, she always insisted I eat, and I didn’t want to.
However, whenever I do have breakfast, I always think I’m “putting fuel in my body for the day,” and I always think of Mom.
Fact #1 – I don’t eat a lot of carbs (aka starch), so otatoepays are generally ixnayed.
Fact #2 – These teeny tiny potatoes are some of the cutest root veggies I’ve ever seen, and I wanted to eat them.
Fact #3 – A friend was coming over. Timing is everything.
And so, a meal was born including tiny, thinly sliced potatoes and other small veggie items.
How to make tiny tater small scramble:

On an uncanny note, this morning the following Harvest Public Radio story aired on my local NPR station: “Potato Industry Banks on Linda.” It’s about the decline in potato consumption and the efforts of the U.S. Potato Board to entice people to bring potatoes back to the table. Timely.

… Oregon and Trader Joe’s, that is. All you coffee and tea diehards, this chai mix will give you a delicious alternative.
The box contains a chai concentrate. You mix it with milk or a milk substitute and heat or ice.
Today was really chilly and grey, ending in a “wintry mix” of rain and sleet. I heated up a mug of Oregon Chai and felt all snuggly and warm. One convenience is that you can modify the chai to your taste. If you like your chai sweet, use less milk. If you want it a little less sweet, use less chai and more milk (like I do).
Enjoy!

There is a delicious tradition for the Jewish New Year. At that time, usually in September, people make a point to eat apples dipped in honey. It’s a symbol and a good-luck dish for a sweet new year.
It’s so good, you might have some to welcome the new month … or the new week … or to pack for lunch every day!
Happy New Year, everyone! Shana Tova Umetukah – a good and sweet year ahead!
