Cutest little pies … ever!

Tonight was the night I cooked the frozen Marinated White Fish Vera Cruz.
It comes out of the bag a hefty mound – obviously not meant for a single serving. I let it mostly thaw in a bowl of warm water for about 20 minutes, then put it in the microwave for the suggested 4 minutes + 2 more minutes.
I put a dainty piece on my plate, and was really happy with the flavor, the texture and ease in which it went down the gullet. I dished out another serving. Gone soon. Well, then there was just one piece left. I could save it for tomorrow, but why wait?
I realized I was getting stuffed, but the marinade was so good – tomatoes, green olives, chiles, onions and capers – that I felt the need to finish it all off.
Serving size suggested on the wrapper? Four servings per package.
Oops.
Another tasting bar moment.
Truth: The tart being sliced into looked just a little tired; not as perky as the picture on the box. I still bit, and took the taste.
The tart might have looked a wee bit weary, but the flavor was alive and kicking! The raspberries tasted fresh and the crust was light and buttery.

My mom was full of wise sayings. Not that we recognized the wisdom growing up, but gradually her words have seeped into my daily life.
One echoes in my mind every day. “Breakfast is the most important meal of the day.” Mom was a breakfast proponent. I’m never hungry until I’ve been up a few hours. So, she always insisted I eat, and I didn’t want to.
However, whenever I do have breakfast, I always think I’m “putting fuel in my body for the day,” and I always think of Mom.
