I was invited to lunch and tea today with my friends Kem, Madalene and Amanda. It was a lovely three hours of delicious food and conversation. The lunch had a smooth cross dissolve into tea and cookies. The tea was wonderful – Benner Green Tea with orange, passion fruit and jasmine.
The cookies were Trader Joe’s Cookie Thins.
You’ll notice that the box contains only one stack of cookies. That’s because we ate the other at lunch.
They’re dainty lemon crisps with a flavor that you can’t mistake. I’ve tried other lemon cookies where the taste was too subtle. The lemon was more of a suggestion than an actual main ingredient. With this cookie, the lemon inside is clear.
Madalene had an idea: Honey and lemon are a tasty combo, so why not squeeze a little honey on the thins? Which she did, then we did, and then we ended up making lemon cookie and honey sandwiches.
Highly recommended.

So, I’m at the Trader Joe’s tasting bar and the barista is offering samples of Spinach and Kale Bites.
I try one.
I say: This is SO good!
She says: I know!
Despite the whole kale craze, this might be my first taste. I’m a veggie lover and spinach is a fave, so it’s no surprise that these green balls with cheesy garlic goodness make my eyes pop out.
I look at the box. Well, the points it scores on flavor it loses in the calorie and fat content. Not the most I’ve seen in a snack, but enough to give pause.
I say: I’m nervous about the calories and fat content.
She says: Well, they’re appetizers, so you’re not going to have very many.
I look at her. She looks at me.
I say: Right….
We smile, sadly, knowing that what’s meant as dainty food for company is too often what’s for dinner.
Sigh.

Things happen for a reason, right? A series of fortunate events proved that point.
Last weekend included a series of impromptu gatherings, one of those rare occasions where open schedule meets spur-of-the-moment invitation. The subject of this post came together on Sunday.
In the morning, a friend called pleading me to help her out that night with an overabundance of ham-and-bean soup. I was happy to be of assistance.
Shortly after that call, another friend texted to join her for lunch and a TJ’s shopping trip. Loyal friend that I am, I obliged.
Then, while at TJ’s, there was a special mid-store temporary tasting station by the cheese section, sampling a new dairy item: Unexpected Cheddar Cheese.
What’s unexpected is the Parmesan cheese that laces the cheddar. SO delicious!
Then I walked a few steps and saw the cutest demi-baguette of olive bread ever:
Everything came together at that moment! The cheese and bread would be my contribution to the soup dinner. And, voila, I made that happen with Trader Joe’s help.
