Shredded Brussels sprouts

9 May

Some purchases are just meant to be.

I was at the end of my TJ’s trip today. Among what I’d put in my cart: a bag of frozen Brussels sprouts and a bag of shredded cabbage. And then I crossed the fated intersection between the two: shredded Brussels sprouts. Obviously, it was meant to be.

I followed the cooking directions on the back of the package – except that I didn’t use any bacon, so it’s a vegan dish. And a delicious one! Highly recommended.

Before cooking:

After cooking, with 2+ Tbls. olive oil, 1/4 cup balsamic vinegar and 1/4 cup water.

Thank you, TJ’s.
