For me, it’s all about the crunch. That’s one of the things cabbage is best at. I grew up eating the leaves (rinsed) off the head – plain and simple. Love. It.
So, when I saw a package of shredded cabbage in TJ’s produce section, a bag suddenly appeared in my shopping cart. I think I put it there, but it happened so fast and hypnotically, I can’t be totally sure.
Now that I had it, though, I was overwhelmed by preparation options. My first use is shown below: cabbage, organic pea sprouts, shredded Parmesan cheese, with balsamic vinegar and olive oil.
Future possibilities for me: steamed with chicken and onions; used fresh as a bed for chicken tamalitos; more salad combos with spinach, onions and tomatoes.
