Ah, soup season! I love it! I savor my summer gazpacho, but when cold weather hits, a warm bowl of soup is the food equivalent of snuggling in bed under a fluffy down comforter.
Trader Joe’s offers several soups, which can be eaten warmed, as is. I prefer to use the boxed soups as starters.
Today, I recommend starting with TJ’s Tomato and Roasted Red Pepper Soup. It’s a great soup alone. Need proof? It has its own Facebook Fan Page. Seriously. It’s also been noted as one of the healthiest boxed foods by Prevention.com.
Add a few ingredients. I chose an onion, a zucchini and a block of tofu.
Heat until the onion is softened and enjoy!
