Recipe for a cool summer night

You have to realize that “cool summer night” is not a term we use often in August in Kansas City. In fact, could this be a first? Probably not, statistically speaking, but for me it is.

However, the stars aligned for my cooking sense this week, preparing me for just this sort of fluke weather.

Hot soup on a cool August night

Recipe for a healthy summer hot soup:

1) Poach three or four frozen chicken thighs.

2) Reserve the water to use as stock.

3) Wait 24-48 hours for a chilly day in August.

4) Transfer chicken stock to pot, add:

  • three chopped onions
  • three minced cloves of garlic
  • a handful of chopped cilantro
  • slices of fresh lemon

5) Ladle into a bowl

6) Add salt, fresh lemon juice and freshly grated Parmesan cheese to taste.

Enjoy and stay warm until the 90-degree weather returns in a few days.

It’s soup season with a vengeance! Trader Joe’s stocks these pretty cans full of healthy ingredients to nudge us through the cold and flu season.

For instance, I learned that lentils contain vitamin C! There’s also iron and calcium inside. Who knew?! Eat up and feel good!

Chicken Chili Lime Burgers from Trader Joe’s

I had a Chile Lime Chicken Burger for dinner tonight. I cooked it – about 7 minutes per side. I toasted an English muffin as the bread element. Sliced onion, spread mustard and layered pickle rounds.

I thought I’d take a picture of the sandwich beauty in front of me. Then I thought, a bite out of it would be photogenic. Then I took another bite. A few more, and there was only a half sandwich left on the plate.

So, I thought, well, half a sandwich could work, too. After that, I’m not sure what happened, but I think my inner carnivore was unleashed because suddenly there was no sandwich left on the plate.

There are four in the box. I recommend recreating the scene I mentioned above and enjoying again and again and again and again.

A good thing to do with Tomato and Roasted Red Pepper Soup

Ah, soup season! I love it! I savor my summer gazpacho, but when cold weather hits, a warm bowl of soup is the food equivalent of snuggling in bed under a fluffy down comforter.

Trader Joe’s offers several soups, which can be eaten warmed, as is. I prefer to use the boxed soups as starters.

Today, I recommend starting with TJ’s Tomato and Roasted Red Pepper Soup. It’s a great soup alone. Need proof? It has its own Facebook Fan Page. Seriously. It’s also been noted as one of the healthiest boxed foods by Prevention.com.

A good soup: The start of a good stew

Add a few ingredients. I chose an onion, a zucchini and a block of tofu.

Heat until the onion is softened and enjoy!

The sweeping scent of cinnamon

I learn so much every day. Like during my last trip to Trader Joe’s. I walked in the door and the fragrance of cinnamon tackled me like a giddy child greeting her favorite aunt.

Just inside the door were baskets of brooms – cinnamon brooms. And smaller baskets of cinnamon whisks.

Like any good aunt, I appreciated the exuberance of the aroma and wanted to express my love adequately, which, in this case, meant I bought one of each.

At home, they fill the room with cinnamon goodness, without even taking off the wrapper!

I wasn’t familiar with this item, but am learning the history, uses and significance of the brooms. So far, I’ve read that cinnamon brooms are an autumnal welcome in the home and a good luck charm.

I’m thinking I’ll be back for more before the season’s out.

Trader Joe’s Edamame Hummus

When it comes to dips and spreads, Trader Joe’s is on a roll. And a chip. And a cracker. As often as possible.

In several other groceries we’ve visited, a container of hummus is twice this price and not necessarily as tasty. And the edamame base ingredient is healthier than other choices. (Although, TJ’s sells a fabulous array of hummuses. It just happens that this base is one of the best for you.)

Highly recommended as one of those items that taste many times more decadent than it really is! A win-win product.

Gummi vites for everyone (except dogs)

I love gummi bears. I do not like taking vitamins. Enter: Gummi vites.

For years, I’d been buying gummi vitamins from various stores. The label offered dosage recommendations for 4 year olds. I just doubled the dose and went on about my day.

What I love about TJ’s Gummi Vites is that they’re inviting to everyone. “Dietary supplement for kids of all ages” – right on the front where you can’t miss it.
